
I've used my Vegan Cupcakes Take Over The World book once more, this time using the Vanilla Gluten Freedom Cupcake recipe. I managed to source some white rice flour so now I have everything! They taste lovely and light, the colour seems to be dark because of the linseed and the quinoa taste is quite strong. I topped them with hazelnut spread. I want to sub the linseed with chia seeds next time to see if it makes the colour lighter. Was a bit worried about the cake mix being so thin but it must be normal. Just so happy with the texture, it wasn't gummy and dense at all :)
