
I served it with salsa and salad. They didn't turn out as firm as I thought but I liked it that way. I like the dijon mustard flavour too!
Then for dinner I used my Appetite for Reduction - Isa Chandra Moscowitz and The Vegetarian Family Cookbook - Nava Atlas cookbooks.
From AFR I made the sweet potato and apple mash and from the Nava book I made the crustless quiche, using red lentils and courgettes to make it extra nutritious and lovely!
