I baked the sexy low-fat vanilla cupcakes from Vegan Cupcakes Take Over The World by Isa & Terry.

I must admit I was feeling daring as I haven't made these since I had just got the book and tried this recipe as they went horribly wrong (very dense, and not light and fluffy). I think one of the culprits was that I didn't have everything at room temperature. But anyway, they came out perfect this time! I love love how overnight they go lovely and soft on top :) I used Kara coconut plant milk too.
