Anyway I made the Brunswick Seitan Stew from Table for Two - Joanne Stepaniak, using the apple fauxsage from 500 Vegan Recipes by Celine Steen & Joni Marie Newman.

Subbed the beans with aubergine which I think goes so well! And I've probably had about 3 portions of veg :)
I made the gluten free chocolate brownie recipe from The Gluten Free Vegan (Susan o'Brien) book I got from the library. I had to adapt as I didn't have the banana and replaced it with egg replacer (equivalent to two eggs), some agave and extra oil (I used safflower).

So glad it rose :) my other half couldn't even tell it was made with brown rice flour and quinoa flour rather than wheat! Served with homemade yogurt (which I made today!)
