Caribbean Jackfruit Stew








I used the Curried TVP Stew recipe from Taymer Mason's Caribbean Vegan book and substituted the TVP with young jackfruit, cooking it all in a slow cooker overnight. Delicious and nutritious!

    Nicely Done! I have tried this with breadfruit before but I'll see if I can use canned green jackfruit instead!
