Missing Egg Sandwich

I am loosely following the 21 day Kickstart plan - http://21daykickstart.org/index_menu_texas.cfm -, dabbling with the recipes provided.. Most of them sounded very salady and simple which really daunted me... Until I tried them. They may be simple but they're packed with flavour and you don't have to limit your portions!




I made the Missing Egg sandwich - http://www.nutritionmd.org/recipes/view.html?recipe_id=15 - originally without relish yesterday (didn't have any) but added onion relish to it for today's lunch... Gorgeous :) I love how the quantities allow you to have more during the week and being so moreish, that really is a good thing as I was worried about getting bored of the same food.
