Southern Beans & Greens with Confetti Kale Salad



So I'm using yesterday's couscous and pairing it with this lovely bean dish (using frozen 'beef' stock from leftover beefy seitan roast). Made a lovely, nutritious dinner :) the bonus being having as much as I want guilt free!
