
A simple meal of carbs, protein and veggies. I marinated squeezed and cubed tofu and courgette in Nandos sun dried tomato marinade, then baked for about 25 mins (covered for 20 mins, 5 mins uncovered at a high temperature). Served alongside long-grain brown rice and salad (baby leaves, spring onion, tomato, sweetcorn & cucumber).
