Back to wheat!

So I'm back to eating gluten, although I'm not eating it at every meal like I pretty much used to. And today I made shortbread with wheat and millet flour :) Mixing flours adds so much more variety I find :) I used the Vegan Cookies Invade Your Cookie Jar shortbread recipe and replaced 1/4 of the plain flour for millet flour.






Will experiment using coconut flour next time for my mum, she loves coconut!

Note to self - the smaller ones stayed the crunchiest, so cook bigger ones for about 16-17 mins or make small ones (one click per cookie)
