Day 3 - So I made the cake again...

... And I officially give up now. It still wouldn't rise properly and was very greasy, but less gummy. Really knocking my confidence, I'm considering mixing GF cooking with my normal cooking so a week off the wheat will be less stressful and more predictable! It had more cracks and the mashed potato was perfect and everything..
