
Have no idea how I got the energy to make all this (from the tempeh-steaming to the orange juicing!) but I made it! The quinoa pilaf was from Nutrition MD.. Not as flavourful as their bulghur pilaf but still a good base for a meal.
The orange-infused tempeh recipe is from Color Me Vegan - Colleen Patrick-Goudreau book. This was delicious but I think I may have 'browned' the tempeh too much! Need to make sure I don't overcook next time and I would also use less tamari as it became saltier as the liquid evaporated.
Served with greens as I love how anti-inflammatory and fresh they are :)
