Carribean Curry w/ Quinoa & Greens


Simple cheat dinner today. I pan-fried tofu with low calorie spray until browned, then added the chickpeas and Levi Roots Carribean Curry sauce (reminds me of Chinese curry!). Served with quinoa, tenderstem broccoli and spring greens. I like!!
