Mushroom & Asparagus Risotto

I guess one of the 'resolutions' I wanted to do is to do the things I say I'm going to do, especially when it comes to food. I'm always saving links to foods I want to make, yet I rarely ever make any of the recipes! I changed that today :)




I served this mushroom and asparagus risotto from Clean Green Simple with steamed kale, I was very happy! So many flavours going on, but complimenting eachother so well.

I used mushroom stock (instead of veg stock), omitted the salt and started to add a little stock at a time but decided it was pointless, and then added the rest of the stock all in one go.


Another recipe I think I've made before but wanted to make it in a bundt tin. The Light & Easy Chocolate Cake from The (Almost) No Fat Cookbook by Bryanna Clark Grogan is really nice and moist, although it really needed soya custard with it (which I used!) or possibly a frosting. Maybe even a sprinkling of icing sugar would have worked, I'm just trying to cut down the calories ;)
